Quinoa Salad with Summer Veggies

serves 4

Ingredients:
1 cup uncooked Quinoa (**Prepare, fluff lightly with fork and cool.)
¼ cup chopped green onion or onions
2 red or yellow tomatoes, seeded and chopped
½ cup fresh cilantro, parsely, or mint (chopped)
1 cup fresh vegetables, diced
1 cup cooked chickpeas (optional)

Dressing:
2 TBSP lemon or lime juice
2 TBSP olive oil
Salt and Pepper

Directions:  

Mix dressing and pour over salad.  Toss gently.

**Preparing Quinoa: Rinse and Drain. Add 2 cups boiling water cover and simmer about 10-15 minutes or until water is absorbed.
