Few grains are as complete a package as wild rice (Zizania palustris). High in protein, B vitamins, fiber, potassium, calcium and iron, wild rice packs a nutritional punch alongside its signature sweet, nutty taste. A natural filter for lakes and rivers, the growing habitat for wild rice is also host to important wetland refuges for fish and waterfowl. Although Canada and Minnesota grow much of the commercially cultivated wild rice, the farmlands of the Willamette Valley are especially suited to its production, with dense clay soil that retains the water necessary for the crop to thrive.
Think of wild rice the next time you are searching for the ideal grain. Save time by cooking a batch of wild rice in advance and storing it in the refrigerator or freezer in small containers. For a nutritional boost, add it to soups, salads, sautés, muffins or stir-fry dishes. If you are in a hurry, consider using wild rice pieces and cut your cooking time in half.
